Often reviled in haute cuisine, sandwiches are being vindicated more than ever. Regaining the respect once lost, they are no longer the exclusive property of bars and cafes. On the contrary, they can be found, in gourmet format, in countless newly minted sandwich shops as much as on the menus of some of the currently best-rated restaurants. An infinite universe of possibilities fits perfectly well between two loaves of bread.
